You know when you get so excited about something that you just want to tell everyone you know about it?
That’s pretty much how I feel about this recipe.
Granola is a favorite in our house, but for various reasons I haven’t made homemade granola “in a coon’s age”, as my husband likes to say.
So I figured it was high time I remedied that.
I was inspired by this Clean Eating Stovetop Granola, but wanted to try something grain-free (I’m still working on a soaked-oat granola recipe over here).
The result of my experimentation was delicious, and it didn’t even take that much experimenting! That’s always a plus.
Even though there’s a LOT of coconut in this granola, it doesn’t taste like a spoonful of dry coconut flakes.
Yeah, I’m happy too.
Coconut Stovetop Granola
So HOW much do I love this granola? Let me count the ways:
#1 reason: its super delicious!
2. Its grain-free. Enough said there.
3. Its not very nut-heavy, which most grain-free granolas tend to be; I generally feel better when I limit my total intake of nut flours, milks, etc.
4. I don’t have to heat up the kitchen and check the oven multiple times; so good for the summer our AC is misbehaving!
5. Its low-carb. Low carb is not for all people, all of the time, but I personally love to start my day with healthy fats, protein, and veggies (not so much carbs). So this is the perfect little breakfast treat.
AND #6, its JUST. SO. SIMPLE.
I could probably list a few MORE reasons why this granola is simply the best…..but I won’t.
In case you couldn’t tell, I get pretty excited when my kitchen experiments exceed my own expectations. 🙂
